Loaded Mac and Cheese

This twist on classic mac and cheese adds in bacon, caramelized onions, and fresh scallions. It's a little bit sweet and deeply savory.

Ingredients

  • 4 slices thick cut bacon, cut into ¼-inch thick pieces
  • 4 small yellow onions, cut into half moons
  • kosher salt, to taste
  • 16 oz macaroni, or pasta of choice
  • 6 tablespoons butter, divided, plus more for the pan
  • 1/4 cup all-purpose flour
  • 5 cups whole milk, warm
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce (such as Frank's® RedHot Original Hot Sauce)
  • 1 pinch ground nutmeg
  • freshly ground black pepper, to taste
  • 2 1/2 cups sharp Cheddar cheese, freshly shredded
  • 6 ounces Gruyere cheese, grated
  • 1 bunch scallions, green tops only, thinly sliced
  • 1 cup Panko breadcrumbs
  • flaky salt, to finish
