Loaded Mac and Cheese
This twist on classic mac and cheese adds in bacon, caramelized onions, and fresh scallions. It's a little bit sweet and deeply savory.

Ingredients
- 4 slices thick cut bacon, cut into ¼-inch thick pieces
- 4 small yellow onions, cut into half moons
- kosher salt, to taste
- 16 oz macaroni, or pasta of choice
- 6 tablespoons butter, divided, plus more for the pan
- 1/4 cup all-purpose flour
- 5 cups whole milk, warm
- 1 tablespoon Dijon mustard
- 1 teaspoon hot sauce (such as Frank's® RedHot Original Hot Sauce)
- 1 pinch ground nutmeg
- freshly ground black pepper, to taste
- 2 1/2 cups sharp Cheddar cheese, freshly shredded
- 6 ounces Gruyere cheese, grated
- 1 bunch scallions, green tops only, thinly sliced
- 1 cup Panko breadcrumbs
- flaky salt, to finish
