Leftover Corn Chowder

Ingredients

  • 1 tablespoon butter
  • 1 large yellow onion, diced
  • 1 teaspoon kosher salt
  • 2 slices cook bacon, chopped
  • 1/2 large red bell pepper, seeded and diced
  • 2 ribs celery, diced
  • 2 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, minced
  • 1 (16 ounce) bag frozen corn
  • 4 cups chicken stock
  • 3/4 cup heavy whipping cream
  • 1 1/2 cup leftover chicken or other cooked protein
  • 1 tablespoon chopped cilantro or other garnish

  1. Heat butter in a soup pot over low heat until melted. Increase heat to medium-low, add onion and salt, and cook and stir until onion is translucent, about 5 minutes.
  2. Stir in bacon, red pepper, celery, and garlic; cook and stir until bacon is crisp, about 5 minutes.
  3. Add chipotle peppers, corn, and chicken stock to soup pot; increase heat to medium and simmer for 20 minutes.
  4. Stir in cream and chicken. Cook until hot, about 5 minutes. Serve in bowls and garnish with cilantro.
