Zucchini Bread with blueberries

3 Clearly Organic Eggs 

1/2 cup heavy cream 

1 Tablespoon Clearly Organic Brown Sugar 

1/4 teaspoon Clearly Organic Vanilla  

1 loaf of zucchini bread, cut into thick slices 

2 Tablespoons Clearly Organic Butter 

2 Tablespoons Clearly Organic Powdered Sugar (optional) 

1/4 cup blueberries, for topping (optional) 

1/2 cup Clearly Organic Maple Syrup 



Whisk together cream, brown sugar, eggs, and vanilla in a shallow bowl or pie pan. Place zucchini bread slices in the mixture and allow it to sit for at least 20 seconds on each side. Heat 2 Tablespoons butter in a large skillet. Once butter is melted add zucchini bread slices and cook on medium-high heat until browned on each side. This typically takes 2-3 minutes per side depending on the pan. Best if served right away. Divide the zucchini French toast among the needed serving plates and top each with a sprinkle of powdered sugar, maple syrup, and blueberries.
