Unique Ways to Use Zucchini

Summer is prime time for zucchini and yellow squash. If you’ve ever grown your own zucchini, you know that you are bursting with pounds of squash during harvest time. Many people begin seeking out interesting and unique ways to prepare zucchini. The mild flavor and texture of this vegetable make it very versatile. It can be added to a wide variety of recipes, from desserts to breakfast omelets and sandwiches to soup.
I think the best way to prepare zucchini is lightly sautéed with olive oil. Add some fresh garlic, plus salt & pepper, and you have a wonderful vegetable side dish. This same sautéed zucchini can be added to eggs, pasta salads, and soups. Zucchini tastes great grilled as well. Cut it into thick slices for chicken or beef kabobs. If cut lengthwise in slices, it makes a wonderful addition to a veggie sandwich. Zucchini is also surprisingly good raw. It simply depends on the way it’s cut. Spiralized zucchini can be a delightful key ingredient to many summer salads. However, let’s never forget how delicious a classic zucchini bread tastes. I hope you enjoy and embrace zucchini season!
