Thanksgiving is a day focused on delightfully rich food, so offering a light side dish is lovely. This chopped salad is the perfect addition to any holiday feast.

 

INGREDIENTS

For the salad:
4 cups chopped romaine lettuce
2 crisp apples, cut into small pieces
2 lemon wedges, to preserve the apples’ color
1/2 cup Clearly by Best Choice Walnuts, toasted and chopped
1/2 cup feta cheese crumbles
1/4 cup Clearly by Best Choice Sunflower Seeds

For the dressing:
1 Tablespoon champagne vinegar
1 Tablespoon Clearly by Best Choice Balsamic Vinegar
1 Tablespoon fresh lemon juice
1/2 teaspoon Clearly by Best Choice Garlic Powder
2 teaspoons Clearly by Best Choice Dijon Mustard
1 Tablespoon Clearly by Best Choice Honey
1/4 cup Clearly by Best Choice Olive Oil
1/4 teaspoon Clearly by Best Choice Ground Pepper

DIRECTIONS

Place all the ingredients for the salad dressing into a mason jar with a lid.

Then secure the lid and shake vigorously until well combined.

The dressing can be made ahead of time and stored at room temperature until you’re ready to use it. Re-shake the dressing each time before dressing the salad.

Next, finely chop the romaine lettuce and place it in a large salad bowl.

To preserve their color, chop the apples into small pieces and squeeze the lemon wedges on them. Set the apples aside.

Place the walnuts in a small sauté pan. Heat them over medium-high for 5 minutes, stirring occasionally.

Then remove the pan from heat and place the walnuts into a bowl until you’re ready to serve the salad.

Add your apples, cheese, nuts, and seeds to the salad bowl with the lettuce just before serving. Add about half the dressing and gently toss the salad contents.

Right before serving, add the remaining dressing, gently toss once more, and enjoy!
