This colorful side dish is perfect any time of year. It is a nice addition to a summer cookout, while also being a healthy serving of veggies for a holiday meal.  

INGREDIENTS: 

5 medium size carrots, peeled and cut lengthwise  

2 medium size parsnips, peeled and cut lengthwise  

2 Tablespoons Clearly by Best Choice Organic Olive Oil  

2 Tablespoons butter, melted  

Pinch of Clearly by Best Choice Organic Sugar 

1/2 teaspoon Clearly by Best Choice Organic Ground Pepper  

1/2 teaspoon Best Choice Superior Selections Salt  

 DIRECTIONS:

Preheat oven to 400 degrees. Spray a baking sheet with Clearly by Best Choice Organic Cooking Spray and set aside. In a bowl, add cut carrots, parsnips, melted butter, oil, pinch of sugar, ground pepper and salt.

Toss to evenly coat vegetables. Roast carrots and parsnips for 35 to 45 minutes, or until tender and golden on the edges. Serve warm.
