Side dish, main dish, or snack, this salad has you covered. There is something for everyone to get excited about. From the tasty veggies to the delicious Italian dressing, let’s not forget the cheesy pasta! No matter the occasion, our Italian tortellini salad will be a hit.

INGREDIENTS

1/2 bag of Best Choice Cheese Tortellini
1 cup cherry tomatoes, halved
1/2 cup yellow pepper, diced
1/2 cup black or kalamata olives, drained and sliced
1/4 cup red onion, finely chopped
1/2 cup jarred artichoke hearts, drained and sliced
6 oz pepperoni or salami, sliced
1/4 cup Clearly by Best Choice Shredded Parmesan Cheese
2 teaspoons Clearly by Best Choice Organic Parsley
1/2 cup Clearly by Best Choice Italian Dressing

 

DIRECTIONS

Cook the tortellini according to its packaging.

While the pasta is cooking, prepare the vegetables and pepperoni.

In a medium size salad bowl, combine the halved tomatoes, diced pepper, sliced olives, chopped red onion, sliced artichoke hearts, and sliced pepperoni. Toss the veggies and pepperoni until combined.

Once the tortellini has cooked, drain the water and let it cool for one minute.

Add the tortellini to the salad bowl with vegetables and pepperoni.

Top the mixture with the parmesan cheese, dried parsley, and half of the Clearly by Best Choice Italian dressing. Gently stir the ingredients to combine.

Let the salad sit for 30 minutes, so the dressing can marinate.

Add the remaining dressing just before serving.
