Start your day on the healthy side with our scrumptious Healthy Breakfast Cookies. Combining a bit of sweet with a bit of salty, our breakfast cookies will keep you full all morning long!
1/2 cup Clearly by Best Choice Unsweetened Applesauce
1/2 cup Clearly by Best Choice Creamy Peanut Butter
1/2 cup Clearly by Best Choice Honey
3 cups Clearly by Best Choice Old Fashioned Rolled Oats
1 teaspoon Best Choice Baking Powder
3 teaspoons Clearly by Best Choice Cinnamon
1/2 teaspoon Best Choice Salt
1/3 cup Clearly by Best Choice Seedless Raisins
Preheat your oven to 350°F.
Spray a baking sheet with Clearly by Best Choice Pan Spray and set it aside.
In a mixing bowl, whisk together the applesauce, honey, and creamy peanut butter.
Stir in the oats, baking powder, cinnamon, salt, and dried fruit, until well combined.
Scoop out about 1/4 cup portions and use your hands to shape the cookies.
The dough will be wet, so it’s helpful if your hands are damp when shaping the cookies.
Shape the cookies to your desired thickness. About 3/4 inch is ideal for these cookies.
The dough doesn’t grow or spread during baking, so you can place them close together on the baking sheet. However, they shouldn’t be touching.
Bake for about 20 minutes or until the cookies are golden on the edges.
Let them cool on the pan for about 5 minutes, and enjoy!
*Note: you can store the cookies in an airtight container for up to a week.
