Ingredients:
Cookies:
1 box Clearly Organic Gluten-Free Lemon Cupcake Mix
1/2 cup butter, softened
1 egg
1 teaspoon lemon zest
Lemon Frosting:
2 Tablespoons butter, softened
1 cup Clearly Organic Powdered Sugar
1 teaspoon lemon juice
1/2 teaspoon lemon zest
1 or 2 teaspoons Clearly Organic Milk
Directions:
Place all of the cookie ingredients into a mixing bowl and stir until dough forms. Cover dough with plastic wrap and place in the refrigerator for at least an hour.
When you are ready to bake the cookies, preheat your oven to 350 degrees. Using a teaspoon, shape dough into evenly sized balls. Place dough balls onto an ungreased cookie sheet being sure to keep them at least 2 to 3 inches apart. Flatten dough balls with the bottom of a small glass. This will give the cookies a uniform circular shape. Bake for 9 to 12 minutes depending on the size.
Let cool 3 minutes on the pan then carefully remove cookies to continue cooling on a plate or rack. While cookies are cooling prepare the frosting. Place all of the frosting ingredients in a small bowl and whisk together until contents are smooth and creamy. When cookies have completely cooled place a thin layer of frosting on top. Enjoy!
