This recipe makes a delicious and easy meal for two. It can be made completely organic and it only requires one bowl and a sheet pan!
1 small sweet potato, cleaned and diced
2 Tablespoons Clearly Organic Olive Oil
1 teaspoon salt
3/4 teaspoon Clearly Organic Ground Pepper
1 cup red onion, cut into wedges
1 cup yellow squash, cubed
1 cup zucchini, cubed
1 (8oz) package mushrooms, cut in half
4 small chicken thighs
3 Tablespoons Clearly Organic Olive Oil
1 teaspoon Clearly Organic Garlic Powder
1 teaspoon Clearly Organic Onion Powder
1/2 teaspoon Clearly Organic Parsley
4 lemon slices (optional)
Preheat oven to 400 degrees. Generously spray a sheet pan with Clearly Organic cooking spray. Place chopped sweet potatoes in a large bowl and drizzle with 2 Tablespoons oil, 1 teaspoon salt and 3/4 teaspoon ground pepper. Toss to coat potatoes then spread into a single layer on the baking sheet.
Bake in preheated oven for 15 minutes or until potatoes just begins to soften. Using the same bowl add chopped onion, squash, zucchini and mushrooms. Add 2 Tablespoons of olive oil, 1 teaspoon garlic powder, 1 teaspoon onion powder and 1/2 teaspoon parsley. Toss to coat evenly. Transfer the vegetable mixture to the sheet pan with the potatoes. Trying to keep everything in a single layer. After veggies are removed from the bowl. Place chicken thighs in the bowl and toss with one tablespoon olive oil and a dash of salt and pepper. Place chicken on the pan with the vegetables keeping food in a single layer. Place a lemon ring on top of each chicken thigh if desired.
Return the sheet pan to the oven and cook for 20 minutes or until chicken is cooked thoroughly and veggies are caramelized. Let cool for 5 minutes on pan then serve and enjoy. If you’re feeding a family the recipe can be doubled and placed on two pans. You would simply need to add 5 minutes to the cook time and rotate the pans halfway through.
