While summer is slipping away, the beginning of fall will be just as hot. Our Cucumber Sandwich will keep you cool with a delicious crunch! Easy to make with simple ingredients, this sandwich is great for a quick lunch or a tasty appetizer.

2 oz Clearly by Best Choice Cream Cheese, at room temperature
1 tbsp whole milk plain yogurt
1 tbsp fresh herbs, chopped (dill, basil, parsley or chives)
1/4 tsp Clearly by Best Choice Ground Pepper
1/2 cup thinly sliced English cucumber
2 slices whole grain bread


In a small bowl add cream cheese, yogurt, chopped herbs and pepper. Stir contents until evenly distributed.

Thinly slice cucumber with a sharp knife or mandolin.

Toast whole grain bread slices then spread cream cheese mix evenly over each piece of toast.

Place the cucumber on the bread so there are three to four layers of cucumber slices.

Top the sandwich, then cut into quarters diagonally.

Serve and enjoy!
