2 cups Best Choice brown lentils, rinsed
water
1 can of Best Choice sliced beets, drained
6 oz white mushrooms, quartered, sauteed
1 small onion, trimmed, cut into large chunks
1/2 cup nutritional yeast
1/3 cup Clearly Organic coconut flour
1/4 cup flaxseed meal
2 teaspoons Best Choice garlic powder
1 and 1/4 teaspoons Best Choice paprika
1 and 1/2 teaspoons Best Choice salt (more or less to taste)
3/4 teaspoon freshly Best Choice pepper (more or less to taste)
INSTRUCTIONS:
In a medium saucepan, combine the lentils and enough water to cover by at least 1 inch. Bring your lentils to a boil over high heat; reduce heat to low and simmer, uncovered, for 10 minutes. Drain and rinse under cool water.
Place lentils in a food processor. Pulse until finely chopped and place in another bowl.
Place the mushrooms and onions in a food processor bowl. Rinse your can of beets and remove liquid with a paper towel. Add to the food processor. Process until very finely chopped. Add your processed ingredients to the bowl of lentils. Add your remaining ingredients to that bowl and stir everything. Taste and adjust flavor as needed. Use or store in the freezer immediately.
Fun
Play dough
Mix 2 cups of Clearly’s Unbleached flour with 2 cups warm water, 1 cup salt, and 2 tablespoons vegetable oil. If you want a little more elasticity, add a tablespoon of cream of tartar will improve elasticity. Add food coloring and store your play dough in an airtight container or plastic bag.
