One of the best parts of summer is all the delicious fruit available. Cantaloupe is one of our favorite fruits to enjoy this time of year, and a salad is the perfect way to do so. Try your hand at our Cantaloupe Caprese Salad to taste what we are so excited about!
INGREDIENTS
1 cantaloupe, halved and seeded
8oz pkg mozzarella pearls
8 slices of prosciutto, cut into strips
1/3 cup basil leaves, thinly sliced
3 tbsp Clearly by Best Choice Organic Extra Virgin Olive Oil
2 tbsp Clearly by Best Choice Organic Raw Honey
1 tbsp champagne vinegar or white balsamic vinegar
Salt and pepper to taste
DIRECTIONS
Using a melon baller, scoop balls from the cantaloupe halves.
Place the fruit in a medium size bowl and add the mozzarella balls, thinly sliced prosciutto, and cut basil leaves onto the fruit.
In a small bowl, whisk together the olive oil, honey, vinegar, and a dash of salt and pepper.
Drizzle the oil mixture over the top of the fruit mix.
Gently toss everything together and serve.
