Potatoes have long been part of a wholesome and balanced meal. They have a lot to offer when it comes to vitamins, minerals, and fiber. Potatoes are rich in potassium, vitamin C and B vitamins. Many of the key nutrients found in potatoes are concentrated in the outer skin. When preparing a dish with these root vegetables it’s best to wash the potato and leave as much natural unbruised skin on as possible. This maximizes the nutrients available in each serving.
Potatoes also contain antioxidants such as flavonoids and carotenoids. Colored potatoes have a more dense concentration of antioxidants and are the most effective at neutralizing free radicals. One of the most beneficial aspects of potatoes is their unique ability to make people feel full and satisfied. When potatoes are prepared is a natural and healthy fashion like roasting, baking or boiling they can be a nutritious part of any meal plan.
